Agave and Production:
100% Tobalá Agave (Agave potatorum), wild, harvested from the rocky slopes and arid soils of the Sierra de Oaxaca. Produced under the ancestral method: cooking in a stone pit oven, manual stone mallet milling, natural fermentation in wooden vats, and double distillation in clay pots.
