Bitru Espadín (Ancestral)
Agave & Production:
Powerful and structured. Firm entry with marked mineral and smoky flavors, followed by hints of leather, spices, and a touch of bitter cacao. Long, enveloping, and earthy aftertaste.

Combination of wild and cultivated agaves (examples: Espadín, Cuishe, and Tobalá, depending on the batch). Cooked in a conical stone oven, manually ground with a mallet, naturally fermented in wooden vats, and double distilled in clay pots, preserving the purity of the ancestral method.
