Many moons ago, when the Sierra of Oaxaca was still a land of mystery and silence, the ancient peoples spoke of a jaguar unlike any other: Bitru, a being with fire in its eyes and untamed strength in its stride.

The elders said it was born under an eclipse, when the sun and the moon embraced in the sky. Since then, it roamed through mountains and valleys as a free spirit, guardian of the life that blossomed from the earth.

In those times, the agave grew as a secret of the gods. Its leaves held the sweetness of the earth and the memory of fire. The spirits chose Bitru as the eternal protector, a bridge between the human and the divine.

The Jaguar’s Pact

One stormy night, men sought food in the agave. Thirsty and weary, they tried to uproot it. Then, Bitru roared with such force that it shook the mountain. The men thought they would die, but the jaguar did not attack.

Instead of destroying them, he guided them: he pointed to the heart of the agave, illuminated by a lightning bolt from the sky. Thus, the men understood that this plant was not meant to be uprooted, but to be honored. They lit a fire and cooked the agave, releasing a sacred nectar that would forever change the history of Oaxaca.

From that day on, Bitru became the spirit guardian of the agave, uniting men with the earth, the fire, and time itself.

The people remembered him as the Guardian of the Agave.
And every time a mezcal master works with patience and respect, they say Bitru’s eyes burn among the embers, ensuring that mezcal preserves its sacred essence.
